Mauviel 5217 40GWP 11 8 Inch Rectangular Roasting Review
Used this for the first time to roast a huge rack of prime rib. The veggies thrown into the bottom of the pan cooked and browned wonderfully. Pan transferred perfectly to the stove top to make the sauce. I was very pleased with the performance of this roaster. It is beautifully finished, as is all Mauviel cookware, and has a significant heft to it. No chance of warping or uneven heating. Compared to my All-Clad, I would give the edge to the Mauviel. The Mauviel is thicker, stronger, and has a little bit more height in the sides.
Note: This pan is BIG. When cooking on the stove top you can use is over two burners, setting the temperature proportionally. The pan is thick enough that heat will be disbursed evenly and you'll have no problem with sauces or quickly browning the meat. ...Read More
